The Polar Salmon Hjerting Laks company was established in 2016 following the merger between Hjerting Laks and Polar Salmon, thus bringing together the very best attributes of two well-established quality brands. Both companies have successfully been smoking fish for many years and the combined knowledge and experience are extensive as a result. Our vision is to create an even stronger quality ethos, focusing on bringing our top-standard products into an increasingly demanding and challenging market place.
The Hjerting business was founded in 1916 when Peder Kjaergaard settled in the small fishing village of Hjerting, just north of Esbjerg. Here, he first started in the trade by opening a grocery store, which was later to become the basis of the famous smokehouse. Traditions, skills and craftsmanship combined with modern technology and a strong passion and drive of our founding chairman, have been the essential ingredients in a century of success. Peder’s son and grandson succeeded him in running the family business, a tradition which has been carried on to the 4th generation of the Kjaergaard family.
The Polar operation was founded in 1985. Since then, the business has grown rapidly and succeeded in developing a solid and substantial worldwide customer base for a range of high-quality fish products. The number of fish products has increased significantly over the years and range from fresh and frozen fish fillet products to highly sophisticated smoked fish delicacies.
We mainly smoke using old-fashioned smoke ovens.The fish is tail hung over beech wood chippings until our smoke master has judged that the fish has achieved the right delicate taste.
